Bacon & Garlic Potato Pave

This is a side dish that is equally impressive as it is tasty, so make sure you spend your time making these for someone that will appreciate the effort, if not, frozen fries will do the trick for those.


Ingredients:

  • 1 pack of bacon

  • 3 garlic cloves

  • Black peppercorns

  • Salt

  • 16oz Cream

  • 3 Russet Potatoes


Directions:

  1. Start off by infusing your cream by placing it on a pot over low heat, then add your pepper, bacon, garlic and season to taste with salt. Let this simmer for at least 20 minutes to get all that good flavor out.


2. While your cream infuses take your potatoes, peel them and then shave them thinly with a mandolin, then drop them in a salt/water bath.

When your cream is already taken off the heat and strained you will find a baking tray as deep as you want your Pavé to be. Then place parchment on this baking tray.


3. Preheat your oven to 300 and start making layers on your baking tray, you will place potatoes then drizzle them with your bacon cream, and repeat until no ingredients are left!


4. Place another piece of parchment paper on top and bake for 50-60 minutes, until potatoes are soft but have no color.


5. Then take them out of the oven and place some weight on them (this will make a tight and beautiful pave!) and when they cool down chill them on the fridge overnight with the weights still on.


6. The next day you can pan fry these and season until perfectly salty!!
