French Onion Soup

If hearing cheese, caramelized onions, white beans, and truffles don’t make you salivate I’m afraid to tell you there’s something wrong with you. Keep this recipe on your back pocket and impress someone when you make it for them. Although this recipe takes a bit of time is super easy and foolproof.
Ingredients:
3-4 Sweet onions
2 cups red wine
2 bay leaves
1 sprig of thyme
1 qt. Beef stock (the good stuff)
1-2 cups cooked Cannellini beans
Cheese of choice ( we used provolone)
2 tbsp butter.
Salt
Black pepper
1 baguette, cut and toasted lightly.
Directions:
1. On a pot sweat your onions with your butter, cook until translucent and starting to stock to the bottom, add your thyme, bay leaves, and red wine. Then cook down for another 30-45 minutes or until jammy.
2. Add your beans to your onions and season the mixture with salt.
3. Add your beef stock and cook for 5-10 minutes or until heated through. Season again with salt and pepper if needed.
4. On an oven-safe container add a generous amount of onions and beans, then stock and top it with your bread chunks covered in a generous amount of cheese. Broil for 2-4 minutes or golden brown and delicious and finish with freshly shaved black truffles!
