Miso Pork With Cauliflower & Mango Jam

We hit it out of the park with this dish let me tell you that much. We brined our pork chop overnight with spices and miso brine that was so flavorful and perfect for pork. We mixed a couple of our recipes in this one, we have the cauliflower purée you might have seen before and another recipe that will be available soon‼️, The mango-ginger jam with caramelized onions.



Ingredients:

  • 2 thick cut pork chops

  • Cauliflower Puree

  • Mango-Ginger and caramelized onions jam








For the brine:

  • 2 1/2 cups of water

  • 3 Tbsp of miso paste

  • 1 Tbsp salt

  • 1 Tbsp mustard seed

  • 1 Tbsp of fennel seeds

  • 1 Tbsp Caraway seeds

  • 1/2 Tbsp red chili flakes

  • 3 Tbsp of brown sugar


Directions:

1. Boil all your brine ingredients in a pot


2. Wait until your brine is cold


3. Place your pork chops in the brine and leave at least 12 hours in it.


4. Sear your pork chops and baste them with butter and garlic.
