Ají Amarillo Yogurt With Charred Veggies

Your veggies are not boring at all, maybe your condiments are, maybe just maybe there isn’t enough salt and acid on your veggies. It doesn’t matter what the issue is this yogur sauce comes in clutch! Super easy to make and delicious, the yogurt kills some of the heat of the Ají and makes it flavor shine trough.


Ingredients:

  • Greek yogurt 1/2 cup

  • Aji amarillo paste to taste

  • 1 bunch of baby broccoli

  • 1 bunch of shishito Peppers

  • Salt TT

  • Juice of 1 lemon

  • Everything bagel seasoning

  • Olive oil

  • Honey-sesame roasted almonds for garnish and crunchhh


Directions:

1. First thing is the sauce, the star of the recipe and the easiest part. Just combine your greek yogurt with ají amarillo, you might notice there are no amounts on aji amarillo since its up to personal preferences. Season with sat and the juice of half a lemon.


2. On a hot pan heat up some olive oil and charr your broccoli and peppers, until some nice color is visible and the vegetables still hold some bright green. Finish with lemon and salt


3. On a plate set a generous amount of your yogurt sauce, top with your veggies and add your garnishes. A generous amount of Honey-sesame roasted almonds make for the best crunch and sweetness the dish needs, some extra olive oil never hurt anyone as well as a surprise shake of your everything bagel seasoning which never fails.
