Ground turkey has a bad reputation, but we are here to fix it, and like many other meals we are fixing it with some very good sofrito. We used a cooked sofrito, made with mirepoix and tomato paste. This sofrito is just onions, carrots, and celery cooked down until all moisture is cooked off and then we add the tomato paste and cook it down for a beautiful deep red color that will stain our meatballs with flavor and color.

Ingredients:

  • 1 lb Ground Turkey

  • 1.5 cups Mirepoix Sofrito

  • 1 Egg

  • 1 tbsp garlic powder

  • 1 tsp cumin

  • 1 tsp black pepper

  • 1 tsp cayenne pepper

  • 1 tbsp dried oregano

  • Salt to taste

  • 3 tbsp all purpose flour

Directions:

1. Preheat your oven to 375 F

2. This is a great recipe because it is just mix, scoop, cook. First we mix all our ingredients together in a bowl mixing throughly. Then scoop into balls that are adequate to whatever you are using your meatballs for so feel free to make them bigger or smaller.

3. On a hot pan, drizzle some oil or fat of choice and sear one side of your meatballs, then flip and finish in the oven for 15-20 minutes or until perfectly browned.

4. Let them rest for 2-4 minutes and ENJOY!
