Cauliflower Purée

Want to impress someone without breaking the bank? We got your back. With just a little technique you can make this beautiful dish with only two simple ingredients.
Ingredients:
1 head of Cauliflower
1 1/2 sticks of butter
Salt
Process:
1. First of all we need to boil the cauliflower on salty water for a little while, you want it to be ALMOST cooked, I would say around 60-70% there. If you cook it completely your cauliflower will have way too much water and you’ll end up with soup.
2. Preheat your oven to 325° F.
3. After your cauliflower its out of the water it will get cooked completely on the oven for about 20-30 minutes. This will not only cook your cauliflower but most importantly, dry it!
4. blend almost all your cauliflower with your butter on a high speed blender until a smooth purée comes out.
5. Plate with some of the roasted florets and the heart of your cauliflower and call yourself a chef, you deserve it!
