Coquito Panna Cotta

The best way to use some leftover coquito (and impress a crowd with it) is making these beautiful and delicious Panna Cotta that jiggle for the days. Impress your dinner-buddies when this small dessert hits the table and finish it there with some cold coquito and some extra virgin olive oil. And let us say in advance, you're welcome!
Ingredients:
450g coquito (around 2 cups)
1 envelope of Knox gelatin (or 4.5 gelatin sheets)
Directions:
Bloom the gelatin in 50g of coquito.
Warm up the remaining coquito and bring it close to a boil, turn it off and add your bloomed gelatin, whisking to incorporate it fully.
Set in your preferred mold, chill overnight and serve with more cinnamon, coquito and a drizzle of olive oil.
