Chicarrón and Coconut McGriddle

This is the breakfast you didn’t know you needed. Make this ASAP!!!
Ingredients:
Chicharrón:
4 cups water
4 oz pork belly
1 tbsp de sal
1/2 tsp pimienta
4 ea bay leaves
Pancake de Coco:
20 g Coconut oil
1 egg
150 g Flour
4 g salt
32 g sugar
6 g baking powder
1 g de baking soda
193 g coconut milk
Directions:
1. Make your pancakes mix and cook in ring molds to make half an inch thick pancakes, cook each for around 8 minutes or until fully cooked andGBD (Golden Brown and Delicious)
2. Season 4 cups of water with your salt, black pepper, garlic, and bay leaves bring to a boil, add your pork belly and cook for an hour or until tender. Remove and cool down, then cut into desired thickness and sear on your oil of choice until crunchy and GBD.
3. Put together your sandwich by cooking an egg in the same mold used for the pancakes and topping it with cheese. Finish with maple syrup, and yeah, you’re welcome!
